Super Easy Sugar Cookies

Last night my sweet tooth was attacking me so I made some really quick and easy sugar cookies that came out great.
Not only are they soft but really yummy too!

Ingredients:
1-1/3 cups and 1 tbls non bleached flour (since I live at 9000 ft. I added about 5 tbls more)
1/2 tsp baking soda (- a pinch)
1/4 tsp baking powder (- a pinch)
1/2 cup softened butter
3/4 cup Organic White Sugar
1/2 egg (since I wasn't sure how to measure 1/2 egg I beat it in a measuring cup and eyeballed it.)
1/2 tsp pure vanilla extract

Preheat oven to 375F
In a small bowl stir flour, baking soda, and baking powder together set aside
In a large bowl cream sugar and softened butter together
Add in egg and vanilla
Gradually add dry flour mix to wet creamed mix
Be careful to not over mix or your cookies will come out hard and flat
Roll into ball with teaspoon onto ungreased cookie sheets.

Bake for 8-10 minutes until lightly golden brown around edges and tops.

Geez O'Flip these cookies are tasty!

Baking Breads

Yesterday was a day of baking. I made some Banana Bread and it turned out so good.
At the same time I was making Whole Wheat Bread in my bread machine.
I love my bread machine because it does all the work. Kneading, Rising, Kneading, Rising, Baking, and Cooling. The only think I don't like is the shape of the loaf. The end result is a cylinder and it's just not what I like. I'm going to have to start letting the dough rise in a loaf pan and bake it in the oven or I'm going to go crazy.

Back to Banana Bread.

Check out these photos and recipe below.

INGREDIENTS:
2 cups all-purpose flour + 6 tbls.
1 teaspoon baking soda - tiny little bit
1/4 teaspoon salt
1/2 cup butter 3/4 cup brown sugar (packed brown sugar)
2 eggs, beaten (room temperature)
2 1/3 cups mashed overripe bananas (I used 3 overripe bananas)

1.Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2.In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
3.Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

THIS IS A HIGHER THAN HIGH ALTITUDE RECIPE. I LIVE ABOUT 9000 FT. ABOVE SEA LEVEL.

I found this nifty Altitude Adjustment Chart online.

Working on an Irish Lace Scarf

My next project is an Irish Lace Scarf. I found this pattern on the Lion Brand Yarn Website.
This little shot is of what I'm hoping mine comes out to look like.
If you've never been to the Lion Brand Website before they have a pretty awesome pattern finder. Click the link-> Pattern Finder!

The yarn I am using for this project is:

Pound of Love® Yarn in Antique White by Lion Brand Yarn

This yarn is a weight category 4...it is usually used for afghan's and baby blankets but since it was so soft and on sale at Joann's Fabric and Crafts I got two for under $10.00.

If you'd like more product information on this yarn or other Lion Brand Yarn you can go here.

Geez O'Flip this looks so cozy I can't wait to get it finished.

My First Afghan

Here is the first project I ever worked on with Crochet. My Auntie taught me the craft and I started my first pattern in November 2008.
It took me a little over a year to complete, but I gave it to my lovely mother for Christmas 2009.

The pattern wasn't that hard at all. I think it just took me time because I made a few mistakes that had to be fixed and that threw me back a little bit. Also, I don't think my hands were used to the hook and movement.

Now I'm glad to say I can do it for hours without stopping. These colors Dark Red and Silver remind me of my Grandpa and his love of the New Mexico Lobo Basketball Team.

Geez O'Flip what a gorgeous afghan!

Bibs for Baby Amelia Part 2

So I wrapped the bibs in homemade wrapping paper I made using pink paper (It's a GIRL!) and Microsoft Office. Tied a sparkly wide wire ribbon around it and it's beautiful! I think it's pretty cute. Check it out.
Sorry the up close photo is blurry. But you get the hint.

Geez O' Flip that wrapping job is wonderful.

Bibs for Baby Amelia

So I have just finished up working on Bibs for Baby Amelia...My friend Jamie and his lovely wife Chelsea are about to be joined by little Miss Amelia Gros. She's due in the beginning of February.
So since babies are messy, I thought I would crochet these little guys. I found these patterns on Lion Brand Yarn Website. Check out the pictures below. Hopefully sometime today I can make a Batman Bib since he is one of my favorites.
Feel free to leave a comment and let me know what you think.

Geez O' Flip these bibs are GREAT!
